Ingredients
- ✓ 2 large carrots, peeled and chopped
- ✓ 2 parsnips, peeled and chopped
- ✓ 3 medium potatoes, cubed
- ✓ 1 large onion, diced
- ✓ 4 cups vegetable broth
- ✓ 2 tbsp olive oil
- ✓ Fresh thyme and rosemary
- ✓ Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the carrots, parsnips, and potatoes. Stir to coat with oil and cook for 3-4 minutes.
Pour in the vegetable broth and add the fresh herbs. Bring to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
Remove herbs and blend soup until smooth (or leave chunky if preferred). Season with salt and pepper.
Serve hot with crusty bread and a drizzle of olive oil. Enjoy!
